Noche Buena originated from the literal Spanish term, which means "Good Night." Indeed, no words are better when used to describe Christmas Eve. Spain, Latin American countries and the Philippines all celebrate the eve of Christ's birth by having a traditional family dinner with all the trimmings.

Most Filipino Noche Buenas consist of such salu-salo favorites such as lechon, hamon, queso de bola and pancit, among many others.
