  • 100g light brown sugar
  • 40 g unsalted butter
  • 550 ml double cream , chilled
  • 4 pcs large ripe bananas , chilled in the freezer for 1-2 hours
  • Squeeze of lemon juice
  • Banana chips

steps

  1. Put the sugar, butter and 150 ml of the cream in a pan over medium heat. Stir continuously until the  sugar  is dissolved and the butter melted. Let it bubble for a minute or two. Stir frequently then remove from heat. Let the sauce cool completely.
  2. Pour the remaining cream into a blender. Peel and chop the bananas and add in the blender. Add one squeeze of lemon juice.  Mix until smooth, thick and creamy.
  3. Spoon a little sauce around the sides of four martini glasses. Divide the banana mousse among the glasses and drizzle with more butterscotch. Top with banana chips.
