  • 1/2 kilo assorted lettuce
  • 1 kilo cherry tomatoes
  • 50 g micro arugula
  • 2 kilos crab claw , steamed and shell removed
  • balsamic vinaigrette:
  • 30 ml Balsamic vinegar
  • 70 ml olive oil
  • salt and pepper to taste
  • lemon-honey-ginger sauce:
  • 50 g Ginger
  • 40 g shallots
  • 200 ml honey
  • 50 ml oyster sauce
  • 1 pc lemon , juiced
  • 2 Tbsps cornstarch
  • 3 Tbsps oil

  1. For the sauce, sauté shallots and ginger. Add honey and oyster sauce. Thicken sauce with cornstarch. Add lemon juice. Season with salt and pepper.
  2. Make a panache of assorted lettuce. Garnish salad with cherry tomatoes. Add crab claws on each side. Pour lemon honey ginger sauce. Drizzle salad panache with balsamic vinaigrette. Sprinkle with arugula.
