ingredients

  • 1 whole duck cut into pieces
  • 1 pc ginger , cut into 3
  • 1 liter white soda
  • ¼ cup soy sauce
  • ½ cup pineapple juice
  • ½ Tbsp pepper
  • 4 pcs potatoes , crinkle cut
  • 2 pcs carrots , cubed
  • 2 pcs red bell pepper , sliced
  • 3 Tbsps cooking oil
  • 1 clove garlic finely chopped
  • 2 pcs onion , chopped
  • 2 Tbsps tomato paste
  • 2 Tbsps bottled chili garlic sauce
  • 1 can pork & beans (small)
  • 1 Tbsp brown sugar
  • 1 can liver spread (small)
  • 2 pcs Siling labuyo

steps

  1. Boil duck meat in ginger, soda, soy sauce, pineapple juice and pepper put water to submerge the duck. Boil until tender.
  2. Fry potatoes, followed by carrots and the bell pepper.
  3. In a fry pan put oil, sauté garlic, onion, tomato paste, chili garlic sauce, pork & beans. Add a little water, brown sugar, and liver spread.
  4. Add duck meat plus the 4 cups boiling stock.  Add the fried potatoes, carrots, bell pepper and siling labuyo.
  5. Simmer for 1 hour or until very tender and the sauce thickens.
  6. Adjust the salt and pepper to taste.
